Go to the big temple (Temple of Time) then walk down the stairs to some ruins. Walk up to the lake and jump into the circle of lilies for your first Korok seed. Almost all of the Main Quests are technically optional in one way or another, and some will provide more benefits than others on the road to defeating Ganon. Outside the cave, go down the path and talk to the old man. However, many of these quests - like the order you complete dungeons - can be done in any order.
